One of my favorite finds has been Zoodles!  I truly could be happy replacing pasta with them for good.  I love the texture, the way they take on the flavor of whatever you pair them with.zoodle I bought my spiralizer from Amazon.  Spiralizer Vegetable Slicer, MILCEA 5 Blades Zoodle Maker with Strong Hold Suction, Veggie Spiralizers Zucchini Spiral Noodle Spaghetti Maker for Low Carb / Gluten-Free Meals for $26.99.  It is easy to use, clean and safe. (I may have sliced my finger, but that is not because it was not safe, it was because I was distracted.)

Today I sauteed onion and then added shredded cabbage, spiralized carrots and zucchini and seasoned with Mrs Dash table blend and Jane’s Crazy Mixed Up Salt.  The key is to not overcook the zucchini, just add them at the very end and warm.

Tomorrow I will use them to make zucchini patties/fritters/laktes.

Today starts my Whole 30 adventure.  (In two sentences, you only eat meats, vegetables, fruits for 30 days. It is an anti-inflammatory diet.) I tried it once and got to the Whole 14 day and then went on vacation and never got back too it.

So I follow Teri Turner, Nocrumbsleft.com and her Instagram account.  She has inspired me to get back too it.  I sent her a private text and was so surprised at her kindness to encourage me on my journey.   It was just what I needed to get my head in the right direction.

When you go on Whole 30 one thing they tell you is you must be prepared to be successful, so this is what I have been up too.



  • I made my favorite cooking ingredient–chicken broth
  • Drank wine (no wine on Whole 30) and ate dessert

I’m Back

I took a nine year break on writing my blog.  Lots has changed!  My theme is the same, I want to live a healthy balanced life.  Over the last few years my balanced life has definitely taken a few detours but I am back at it.  Over the last nine years:

Love of my life retired after 33 years in education.  He is now a realtor and is doing a fabulous  job.  He loves it!  Never been more in love with this fabulous man!  We are going on year 37!

Candace is a 20 year old make up artist about to go back to school to be an esthetician.

I have worked for a corporate wellness company for the last seven years.  I am an account manager for them.  I am going part time in a month.  Time to help Keith with his business and spend time with my grand babies!  I am working again to find balance.  It is my thing, my struggle.
